The fish they are most particular about is wild sea bream raised in the Seto Inland Sea. After the catch, local fishermen don't kill it immediately, but instead let it settle in a special tank and kill it the next morning, which apparently eliminates the fishy smell and brings out its flavor. The large tidal range keeps the flesh firm, and the slightly pink flesh is rich in sweetness. Whether it's served as sashimi, simmered in soy sauce, or in a rice pot, it's delicious enough to make your lips water.
